If you are allergic to eggs, try Ener-G Egg Replacers for your baking needs. Available at Whole Foods. Carol Fenster writes in Special Diet Celebrations (p. 231), “Ener-G recommends 1 1/2 tsp. Egg Replacer powder mixed in 2 Tbsp. water. In this book, I use 2-3 times as much powder for better results.”
